Today, I decided to check off another restaurant near the lab called Uohachi (魚八), which is a specialty fish restaurant. It was a bit tricky to find but for the sake of completeness, I had to find it. Looking at the menu on the wall, I saw a maguro and seafood sashimi set (マグロ海鮮刺身セット). From my guess I could tell there was maguro, a slightly fattier piece of tuna (not quite chuutoro or medium fatty tuno but somewhere inbetween), scallops, squid, negitoro, and maybe katsuo. Oh, and the sweet egg of course.
The quality of the seafood was nice. It still didn't have the same impact as good nigiri sushi since fresh fish tends to be a bit milder (rather than carefully dry aging the fish a bit to draw out a bit of moisture) but the texture was very decadent. One nice note to see was the set of micro-cuts or scoring on the squid. It's a typical technique seen in sushi to help with surface area but, more importantly, make it easier for the user to eat. Nice to see it carefully done for the ika!
I didn't notice any minor scoring for the rest of the fishes but the scallops and tunas were tender enough where no additional help is needed. The katsuo-type fish was a bit lack luster and didn't have much of a pleasant taste so that was a bit of a miss. But otherwise, I think for 1000円, it's quite decent for a sashimi place. I think it's definitely worth y'all's time. 7.5 or 8/10.
Another reason to come here is there's apparently a building cat that's the cutest thing. I wish the at was close enough for me to take a picture.
