While on a walk around Ginza, was interested in trying some lighter ramen so we stopped by Ramen Takahashi. The ramen specializes in light salt pork-based broths with grilled "flying fish" or 焼きあご. Rather than getting the normal variant, I went for the the one topped with mushrooms, poached chicken breast, and sudachi (calamansi). After a few hours of walking (and a few after this), having something light but fufilling definitely hits the spot.
Although this is a salt ramen, there was quite a bit of aromatic oil, making this an somehow very light and heavy simultaneously. Drinking the soup, it starts off with a nice salinity with fragrance of pork (and maybe fish). Depending on where you sip, the smell of the sudachi also adds a nice touch. However, the oil adds a solid base of umaminess that coats the noodles so well, giving it a little bit of omph that one might appreciate from a tonkotsu broth. The mushrooms seemed to have been cooked with some stock so it was very savory while the poached chicken breast was cooked to perfection.
If you're walking around Ginza and see this long queue of Japanese people waiting for ramen on a weekend at 1pm (as I did with this place), it's probably a really good sign.
